Under pressure....(riff)....pressure....

Ah, classic Queen and David Bowie. Now, thanks to VH1, I always think of Vanilla Ice when I hear that song; trying to explain, unsuccessfully, that he really didn't steal the riff without permission because he added an extra note at the end. But I digress.....

More fun forms of pressure were in the cards this week in my kitchen. I finally got to take the pot for a spin and I must say, "I like!"



The inaugural dish was Beef Short Ribs with Asian Flavors. Perfectly cooked in less than an hour and quite scrumptious indeed.

Chad took it for a spin a few days later by preparing Alton Brown's Pressure Cooker Chili. This was probably the most unique chili recipe I'd ever seen and I must admit I was skeptical. Come on....jarred salsa? Tortilla chips? The end result won me over: a velvety red stew with subtle smoky flavors and gentle chile heat. Served with cornbread. Now that's what I call Good Eats...(although we did use store-bought chili powder. *gasp* too much bother to make our own)

Next up for the weekend? Pressure Cooker Risotto....
