Peach Gelato

Makes: About 1 Quart

1 c sugar
2 c water
1-1 1/4 lb peaches, about 2 large
1 t fresh lemon juice
1 c cold heavy cream

Combine sugar and water in a heavy saucepan and set over medium heat. Bring to a boil and simmer 5 minutes. Remove from heat and cool completely.
Peel and pit peaches. Cut into rough chunks. Puree in a food processor or blender. Measure out two cups of puree and stir in lemon juice.
Combine cooled sugar syrup and peach puree. Chill at least two hours.
Stir in heavy cream and freeze according to your ice cream maker's instructions.
