Mixed Berry Crisp

Serves: 8

1/2 c all-purpose flour
1/3 c sugar
1 1/2 c crunchy bits (nuts, oatmeal, crushed gingersnaps) - I used crushed gingersnaps
2 oz cold butter, diced

1 lb berries (I used a mix of red raspberries and blackberries)
Sugar, to taste (Our berries were so sweet that they did not need sugar)
1 T cornstarch

Preheat oven to 350 degrees. Combine flour, 1/3 c sugar, and crunchy bits in a medium bowl. Work butter in with your fingers to make a streusel. Set 1/2 c of topping aside.

Gently toss berries with cornstarch, sugar to taste, and 1/2 c of topping. Put into a shallow 2 qt oven proof dish. Top with remaining streusel. Bake for 30-40 minutes or until filling is bubbly and topping is brown. Let cool 15 minutes before serving. Serve warm with vanilla ice cream or whipped cream.
