Seven Layer Bars
Source: Baking IllustratedMakes: About 20 bars
1 c sweetened flaked coconut
4 oz (1 stick) butter
5 oz graham crackers (About 9 cookies), coarsely crushed to make 1 1/2 c of lumpy crumbs
1 c chopped pecans, toasted
1 1/2 c semisweet chocolate morsels (you can replace 1/2 c of this with butterscotch morsels per the original recipe. I don't really like butterscotch morsels so I increased the chocolate)
1/2 c white chocolate morsels
1 can sweetened condensed milk (the short can)
Preheat oven to 350 degrees. Spread coconut on a baking sheet and toast in oven for 8 minutes. Do not let it burn. If it burns, start over. Set aside after it's toasted.
Prepare 9X13 cake pan by folding one 16" square of foil lengthwise to 13" and another to 9". Spray pan with cooking spray. Line pan with both pieces of foil and spray again. This stuff will be sticky.
Put butter into prepared pan and put it into the oven to melt. Add crushed graham crackers and toss to combine. Spread evenly in the pan.
Sprinkle the other stuff over the cracker mix in the following order: pecans, semisweet morsels, white morsels, coconut.
Pour the can of condensed milk over everything as evenly as you can. Bake for 30 minutes or until top is golden. Cool on a rack for 2 hours. Lift bars out of the pan using your foil liners. Transfer to a cutting board and cut into 2X3" bars using a sharp knife. Enjoy!
