Strawberry Ice Cream

Makes: 1 Quart
2 pints strawberries, hulled and diced
1/3 c sugar
Juice of 1/2 a lemon
2 eggs
3/4 c sugar
2 c heavy whipping cream
1 c half & half
Place half the strawberries in a medium bowl and reserve the rest. Sprinkle with 1/3 c sugar and lemon juice. Refrigerate for at least one hour, tossing occasionally. Once strawberries have macerated and given up their juice, mash with a potato masher and keep cold.
Beat together eggs until light. Gradually add sugar. Add cream and half & half and beat well. Refrigerate mixture for at least 3 hours. Combine mashed berries and cream base. Freeze in an ice cream freezer per manufacturer's instructions. When ice cream is almost frozen, add reserved berries. Freeze in airtight containers.
